Tuesday’s Tip Jar: Cake Balls

See that pink thing in the photo inside of that pretty tin foil paper? Well… that’s Becky Moltumyr’s Cake Ball Recipe that she used for the Spring Dinner at church. Let me tell you…it was TO DIE FOR it was SO GOOD.
I wrote and asked her if she would share that with me and she did. I’m so excited because now I have something new to make for special occasions instead of the typical every day desserts.
Pure White Cake Balls/with Cream Cheese Frosting
Duncan Hines White Moist Cake – (uses only egg whites) Follow directions of mixing and baking. Let it sit for ½ hour and then ( I used a cheese slicer) peel off the baked yellowing on top. Slice up the white cake with knives, making sure you don’t cut through all the way to the bottom or too close to the sides, and then scoop it out of the cake pan into a large mixing bowl. Make sure it’s all crumbled, using knives to cut through any large pieces. Add the Cream Cheese Frosting – recipe below. Form into balls and place on a baking sheet in the freezer for at least 2 hours. Melt Candy – (I used the Pink candy disks from Hobby Lobby & Michaels) and dip the balls – let dry and drizzle the top.
Coconut Cheese Frosting
1 8 oz. cream cheese
4 Tablespoons soft butter (Whip these till light and creamy)
1 Tablespoon vanilla
Add 1 cup of powdered sugar
Coconut Variation
Do everything as above except…add a cup of coconut to the cake mix before baking. Add ½ cup to the frosting mix. Spread Coconut in the large jelly roll pan and drop the ball into the coconut immediately after it is dipped in the candy. It hardens very quickly so I just dropped it in and pushed it slightly with a spoon to coat it with coconut.
I will say it AGAIN…these CAKE BALLS are to die for!!!!!!!!!!!!! :]
